In Hokuto City, natural resources are abundant and fresh. The region is famous for its pure Hakushu waters, used by famous companies like Shichiken and Suntory for their alcohol products. At Assiette Yatsugatake, they put a strong value on sourcing ingredients locally, and most of the spices and herbs found in their flavorful dishes are taken from the neighboring fields!

Owner and chef, Mr. Shimizu explains that his initial focus wasn’t to be known as a vegetarian restaurant, but instead it was to use the freshest and most natural ingredients in the region for his French cuisine. Mr. Shimizu replaces wine sauces commonly used in French cuisine with the waters of the Yatsugatake region. Almost all of the menu is alcohol-free, and if you call in advance you can ensure your restrictions will be accommodated (vegan, vegetarian, halal, etc.).
