          At our fourth stop here in the Hokuto region, I couldn’t help but come to realize just how amazing the natural resources in this area are. This was the Hakushu region with water so pure that companies like Shichiken used it for their sake, and Suntory for their whisky. A region where the local vegetables are so fresh and delicious a simple office cafeteria opened up its own first-class restaurant using almost the exact same concept. And here at our final stop Assiette Yatsugatake we have stumbled upon a restaurant that puts such strong value on the local resources that most of the spices and herbs used in their dishes are taken from the field’s right at the doorstep!

          The owner-chef Mr. Shimizu took his time to explain to us the philosophy behind his meals. Although his focus isn’t intentionally vegetarian it was his goal to use the freshest and most natural ingredients in the region to express his own style of French cuisine. Even the type of wine sauces French cuisine is famous for gets replaced with the water of the Yatsugatake region. Save for one of the desserts that uses a tiny amount of white wine, none of their recipes contain alcohol so with a 2-3 contact in advance they are able to change their menu into a more Muslim-friendly option.

          It is requested that those with food restrictions (whether vegetarian, vegan or halal) contact the restaurant in advance so they can assure that any dietary restrictions be accommodated.
